There’s a local fast food chain where we live that my mom loves to frequent (despite my constant protestations 🙈🤷🏼♀️😂). She recently texted me a picture of a salad she had ordered there saying basically, “Hey! Check it out! Health Food!” I tried to nicely let her know that you’ve really gotta be careful about salads from fast food joints and restaurants in general, because they’re often loaded with added fats, sugar, and sodium (especially in the dressing!!) making them just as bad as that greasy burger combo while masquerading as a healthy choice. So, I made this healthy version for her at home. In the pic it’s paired with sautéed asparagus. What you’ll need – the salad 🥗
Grilled chicken breasts
What you’ll need – the dressing
Plain Greek yogurt
What you’ll do
Tear the baby spinach leaves for the base of the salad. Chop the grilled chicken breasts. Wash and chop the strawberries. Wash the blueberries. Prepare the pineapple (or buy the chunks or rings canned in pineapple juice and strain the juice off). Top the spinach with the chicken and fruit. Add walnuts if you like. My hubby loves them, I’m kind of indifferent. They taste okay to me, but I also like this salad without them. I will say the crunch is nice. You choose. Prepare the dressing by mixing Greek yogurt with lemon juice and honey to taste. I tend to use more lemon, less honey because I love the tangy flavor with the sweet fruit and savory chicken.
