Toasted onion chicken and pesto green beans

As you’ve likely noticed, we are big fans of delicious, healthy food that can be put on the table quick, fast, and in a hurry. This one is a big hit in our house due to its deliciousness coupled with how quickly it gets prepared and on the table. Less than 30 minutes from prep to plate! It’s perfect for meal prep too because it reheats well and since everyone in my house loves this fast, fresh feast I usually make a double batch to ensure that there are leftovers for the following day. 💚🍅🌿🍗

What you’ll need

1 package skinless, boneless chicken breast tenders
2 tbsp extra virgin olive oil
Minced onion flakes
Black pepper

Fresh green beans
Cherry tomatoes

What you’ll do with it

In a large pan, heat 2 tbsp extra virgin olive oil over medium heat. Hold the pan by the handle and shift it side to side until the olive oil coats the bottom of the pan. Add in minced onion flakes and black pepper to taste. When the onion flakes just begin to brown, add in the chicken tenders. Cook 4-5 min per side, depending on the thickness of the chicken. While the chicken is cooking, wash and slice cherry tomatoes. We like a lot of tomatoes so I usually use about a cup. You can adjust the amount to your taste. Remove the cooked chicken tenders from the pan and add in pesto, still on medium heat. The amount of pesto depends on the amount of green beans you’re making. You want to coat the green beans but not make them oily. Remember you can always add more but you can’t take out. So start with a couple tablespoons and add in if you need to. Sauté the green beans in the pesto for 4-5 minutes and then add in the tomatoes and let it all cook together for 4-5 more minutes.

Tada! That’s it! Another fresh, delicious, healthy meal, prepped, cooked, and served in less than 30 minutes! We literally eat it just like this but you could definitely add in some extra veggies or fresh fruit for sides! Leave me a comment and let me know how you make the recipe your own! Enjoy!!
