Tuna Salad on Toast

Now that the weather is warming up, my 3 year old son asks to eat dinner as a picnic in the park behind our house nearly everyday. I love to say yes to requests like this because it’s simple, free, family fun and I’m loving that we have the ability to be out soaking up the sunshine! If you also love picnic dinners, you’ll love this easy and delicious version of tuna salad! Replacing the mayonnaise with Greek yogurt creates a fresh, healthy, delicious version of this classic that cuts out the unhealthy fats and added sugars of mayonnaise or salad dressing!

What you’ll need

Tuna
Dill pickles
Plain Greek yogurt
Spicy brown mustard
Whole grain bread
Bell peppers – red, yellow, orange, green

What you’ll do with it

Dice dill pickles and slice bell peppers. Toast bread. Mix the tuna with the dill pickles, Greek yogurt, and spicy mustard to taste. If I had to guess I’d say maybe 1/2 cup yogurt and 2 tbsp spicy brown mustard. That’s how we like it, but you should play around and find the way that tastes best to you! Now pack it all up and remember to grab some fresh fruits to go with!

Take it to the park, spoon some tuna salad on the toast, top with bell pepper strips and enjoy. We also usually bring along other fruits and veggies to snack on as sides. Some days we bring baby carrots, apples, bananas, raspberries, pretty much anything that’s easy to grab and go! This particular day we had cherry tomatoes and orange slices (not pictured) but just grab what you’ve got handy!
