Avocados! 🥑🥑🥑 Really no further explanation needed, right? We love to eat avocados at my house. By themselves and/or with (almost any!) other food. In savory recipes and sweet. At breakfast, lunch, or dinner. All. The. Avocados. They’re delicious and they’re also one of my 9 month old son’s favorite things to eat (read: smash, squash, squeeze, and stuff into his adorable, tiny face 👶🏼🙈😍) I don’t even need to tell you (but I will because extolling the virtues of the avocado never gets old!) that avocados are nutrient packed superstars that are a good source of vitamins B, C, and E, as well as potassium, lutein, and folate. Plus! they contain healthy monounsaturated fatty acids or the “good fat” that can help lower cholesterol! So, now that you love avocados more than you did when you started reading this post (if that’s even possible!) let me tell you what deliciousness they help create here in this recipe.
What you’ll need
Cooked chicken breast, diced
Cherry tomatoes, halved
Hot sauce (optional)
What you’ll do with it
Toast some bread. (We like Dave’s Organic Thin-sliced Killer Bread. It’s only 60 calories per slice and packed with yummy whole grains!) While it’s getting perfectly toasty and golden brown, dice cooked chicken breasts, halve cherry tomatoes, and mash some avocado(s) in a bowl (the amount of all these ingredients depends on how much you want to make/how many people you’re serving/and your taste preferences!) Add lime juice (to taste), diced chicken and halved cherry tomatoes to the mashed avocado and stir a bit to mix them together.
Spoon avocado chicken salad onto toast and drizzle with hot sauce, if you like! (That’s Valentina hot sauce you see on my toast. It’s definitely nothing fancy and retails for less than a buck most places but I am unashamed to say I love it! I can’t get enough of that stuff and I use it on all the things to add some tasty heat!)
